VeganMofo and Split Pea with "Ham"burgers
I honestly thought that today was September 31. Ha! So October is upon us and therefore the VeganMoFo is also upon us. This year there are over 200 participants! CLICK HERE for the original PPK post with a complete list of links.
To kick off the Vegan Month of Food, I give you a super-top-secret tester recipe from the Burger book.
Split pea soup with chunks of ham was the inspiration for this burger.
Split Pea with HAMburger (makes 8 patties)
Serving Suggestion: Serve on a nice crusty piece of toasted sourdough or french bread. On the side? Steamed cauliflower, perhaps, drenched in a noochy cheezy sauce?
4 cups veggie broth
2 cups dry split peas
2 cups chopped "ham" (see below)
1/2 cup all purpose flour
1/2 cup canola oil
2 tbsp onion powder
Sea salt and fresh cracked black pepper to taste
Directions
In a pot, add broth and peas. Cover and bring to a boil. Reduce to a simmer, and cook an additional 15 minutes, covered. Remove lid, and continue cooking until tender, and most of the liquid is absorbed. Transfer 3 cups of prepared beans to a mixing bowl and allow to cool enough to handle. Add in the remaining ingredients and mix together very well with your hands. Form into patties. Pan fry in oil. About 3-5 minutes per side, on medium high heat. These taste best fried, but can also be oven baked. 350, 15 minutes per side, loosley covered in foil.
Seitan Ham (makes just over 2 cups)
The flavor is sweet and smoky, like a black forest ham...minus the dead pig!
1/2 cup garbanzo or fava bean flour
1/2 cup vital wheat gluten
1/2 cup water, or veggie broth
1/4 cup canola or vegetable oil
1/8 cup brown sugar
1/8 cup nutritional yeast
1 1/2 tbsp tomato paste
1/2 tsp liquid smoke
1/2 tsp black pepper
1/4 tsp salt
Preheat oven to 350 F. In a mixing bowl, mix together all ingredients until a nice goopy mixture forms. Spread a large sheet of aluminum foil on the counter. Plop the mixture into the middle of the foil. Roll the foil over the mixture, and twist the ends tight, so that a nice "log" is formed. Place on a cookie sheet, seam side down, and bake for about 45 minutes or until nice and firm. Remove from oven and allow to cool enough to handle.
Slice off a piece for yourself to snack on while you are cooking the peas. Chop up the remaining "ham" into little 1/2 inch cubes for the burgers.
