For many of us, the Holidays are no longer about presents, like they were when we were kids. As a grown up I really enjoy the opportunity to meet up with friends and family over a drink, or a meal, and really spend quality time together joyfully in the spirit of the season. Don't get me wrong, I absolutely love the holidays! The amount of decorations that adorn my 700 square foot home is ridiculous and Christmas music blares from my car stereo as well as my house all month long. It's just the buying of "stuff" for the sake of buying "stuff" that really gets to me.

Thanks to everyone who came out to Tanaka Farms on Saturday for the Plant Powered OC Vegan Holiday Cooking Demo and Talk. It was a great turnout and we had a super fun time!

A couple of notes about the following recipes. THEY ARE FLEXIBLE! Don't like pecans? Use walnuts. Don't like yellow onions? Use red ones. Don't like cranberries? Use raisins. Don't like wild rice stuffing? No worries, use your favorite stuffing recipe instead. Don't want to put the puff pastry on? Don't! It's all about making food that YOU like. Not me. So have fun with it.

Over the last few weeks I have been cooking up a storm. Nope, not at home. But for people interested in learning how to cook vegan! Nothing warms my heart more than teaching people how to cook without animal products and then hearing them afterwards telling me how much they loved the food. Its the best feeling in the world.

Just a week ago I was denying the fact that summer was coming to an end. I was determined to enjoy the most sunshine and blue skies possible. I love summer. It's my favorite season. I love tank tops and sundresses, the feeling the sunshine on my shoulders, and wearing less make-up so my freckles can shine through.

Watermelon Poke Bowls





Over the weekend I was out at Tanaka Farms teaching the third and final of my Summer Cooking Series classes. (Don't worry, next up is the Fall Harvest Cooking Series!) It's kind of a weird time on the farm...I mean it's the end of Summer, so our Fall harvest is not quite ready for picking and the Spring harvest has long since gone. Ripe seasonal produce is mostly tomatoes, corn, and melons. And when I do these classes, I really like to focus on celebrating the season's bounty, so my recipes always center around what's in season.

I am super excited to announce the arrival of our new book! Celine and I were at it again, together, to create an entire book full of recipes that bring our favorite ingredient (NUTS!) to the forefront. No longer are they relegated to a sprinkle on top of salads. Nope. Nuts take center stage in this book, with recipes for basics, like nut milks, butters, cheeses, and mayos to entrees like the slow-cooked barbecue pecans in the Texas Hold 'Ems (on page 100) that I am excited to share with you below!

Purple Cauliflower Tacos with Quick Pickled Radish Relish


Sorry for posting two taco posts in a row. But, for the first time in my entire life, I am working a schedule which allows me to be home for dinner with my husband pretty much every night. Coming up with dinners that satisfy my need to experiment in the kitchen, and Dan's need for something "yummy" (I swear he eats like a 14 year old!) has proven to be a challenge, lol. But there is one thing we both can agree on, and that's tacos.

Grown-Up Grilled Cheese & A Giveaway!

Gametime Snacks: Cashew Queso

Only a few more days until the big game! I thought I might take a little break from buffalo flavored snacks and, instead, in my continuing effort to provide you with the best vegan gametime snacks, here is my favorite Queso recipe. It is from my and Celine's new book Vegans Go Nuts! which will be out later this year.

Cashew Queso

*Oil-Free Option *Soy-Free *Gluten-Free
This makes a ton of queso. Perfect for putting in a crock pot to keep warm at a get together. It’s also pretty awesome to stir in a can (or two) of your favorite vegan chili. You can also pack it up in Jars and keep it refrigerated (or frozen) until you are ready to use it. Or…simply cut the recipe in half and you will still have plenty of queso to last for several dip and chip sessions. If you want to save time, you can stir in some of your favorite salsa at the end, instead of chopping up all of those fresh veggies.

Gametime Snacks: Beer Battered Buffalo Mac and Cheese Balls


I am sure having a blast planning and testing out some deep fried deliciousness for the big game next Sunday. A few years back I featured a recipe for deep fried mac and cheese balls in my and Celine's book Home Cooked Vegan Comfort Food. And they were delicious...But, I felt for a game as important as the 50th, I needed to step it up a notch.  And as I said in my previous post, buffalo is a must for gameday. I also changed the batter up to include an almost corndog like flavor. Crispy and crunchy on the outside, rich and creamy on the inside. They aren't too spicy, just a hint of heat. That way you can add extra heat to your liking with a variety of dipping sauces! (As if deep fried mac and cheese wasn't good enough on its own...)

Recipe: Avocado Cilantro Lime Vegan Chicken Tacos with Spicy Aioli



Vegan tacos are all the rage right now. I mean, have you seen the amount of press the Taco Scientists behind the crazy popular new book The Taco Cleanse have been getting? It's a good time to be a taco lover. I mean it's a trend I can really get behind. I flipping LOVE tacos.

I also like my tacos messy. Piled high with stuff and dripping wet with saucy goodness. Yesterday was Taco Tuesday, and like any good taco loving vegan, I headed out for a taco lunch with friends. And while lunch was amazing, I was left with a hankering for more. More tacos!

This Vegan's Gone Nuts! Buffalo Peanut Inside Out Sushi Rolls



So, Celine and I are putting together the finishing touches on our newest book, The Great Vegan Nut Book, (but we may rename it Vegans Gone Nuts!, not sure yet...I'll keep you posted.) And the bugger is already available for pre-order!

In the spirit of football season (all of the sudden my husband is a football fan!) and in the spirit of me adding a fusion twist to almost everything I cook, I thought I would share one of my favorite recipes from the upcoming book.

Why not try this spin on "buffalo" at your next football party? I suppose it depends on the crowd, haha, but I think my football loving friends would be totally into it!

Happy New Year! "What I Ate" on Instagram....



 

Happy New Year! I hope all of you are settling in nicely to 2016. We are now about two weeks into January, and I can already feel the changes this year is certain to bring. I started this year out with only one resolution, and that is to find joy in what I am doing to make a living.

So many major changes in my life at the end of 2015, I decided to let the opportunities guide and be my resolutions. I can honestly say that in my quest to say "yes" to as many things as I can, I have already met so many great people, and learned so much.
