Chocolate Pudding

I was so excited about the vanilla pudding that I had to try chocolate!



Chocolate Pudding
Ingredients:
1 14 oz can of Coconut Milk
1 cup + 1/3 cup soy milk or creamer (I used vanilla, but plain is fine too)
1 cup sugar
1/4 cup arrowroot powder
1/2 cup cocoa powder
1 tsp vanilla extract
1 tsp chocolate extract (optional)

Directions:
Mix arrowroot and extracts into the 1/3 cup soy milk to make a slurry and set aside. In a sauce pan place the Cocount milk, remaining soy milk, sugar and cocoa. Bring to a boil over medium heat, stirring often to prevent lumps and to fully dissolve the cocoa. As soon as it begins to boil, remove from the heat. Pour in the slurry mixture and stir vigorously. It will immediately begin to thicken up. Pour into dessert cups and refrigerate until ready to eat! YUM!

My little sister got married yesterday!!! I brought cupcakes over to snack on while we were all getting ready, and I had enough batter to make her a mini cake to take back to the hotel room after the reception.

Jalapeno Burgers with Nacho Sauce & Vanilla Pudding

Another burger. This time, it's cornbread meets burger to make a spicy jalapeno sammy drenched in nacho cheezy sauce.

Jalapeno Cheddar Burgers
I was so impressed with the texture of the ho'made ice cream the other night I decided to alter the recipe a little bit and make pudding. I haven't had pudding since I wen't veg, so I am pretty excited about this.

Coconut Vanilla Pudding (Based on the recipe for Cookies & Cream Ice cream at www.veganicecream.blogspot.com)
Ingredients
1 14 oz can of Coconut Milk
1 1/4 cup vanilla soy milk
1 cup raw sugar
1/4 cup arrowroot powder
1 tbsp vanilla
Directions
Mix the arrowroot into 1/4 cup of the vanilla soymilk to create a slurry and set aside. In a saucepan mix the coconut milk, the remaining soymilk and the sugar. Bring to a boil. As soon as it begins to boil, remove from the heat. Stir in the arrowroot slurry and stir until it thickens. Add in the vanilla and continue to stir. Immediately pour into dessert cups and refrigerate to cool and continue to thicken. Garnish with fresh berries, make a parfait, or do whatever floats your boat.

Sunday Night Dinner & Dessert

We have an abundance of tomatoes, so I used a few to make "Lazy Bruschetta." Just a few tomatoes seeded and chopped, 1 diced red onion, 2 cloves of minced garlic, dried basil (fresh would be much better), olive oil, and sea salt and fresh cracked pepper to taste. (The tomatoes, garlic and red onion in this are from Mom's garden.)

But the real traet was dessert. HOME MADE ICE CREAM!!! I don't have an ice cream maker but I saw this site: http://kitchen.apartmenttherapy.com/food/tips-techniques/how-to-make-ice-cream-without-an-ice-cream-maker-026055 and had to give it a try. I used the recipe for Cookies and Cream from this site: http://www.veganicecream.blogspot.com/ but subbed coconut milk for the soy creamer. Yummy!



Now I have to admit that i gave up on the bag in the bag method after my outer bag sprung a leak and my hands were frozen, so I just poured it in a container and stuck it in the freezer, stirring it up a few times before it was completely frozen.

Earth Burgers

Healthy Burger #2. This one is a little more labor intensive, but it sure is yummy.

Earth Burgers definitely scream, "Hippie food!" But, that's definitely okay with me.

The Recipe (makes 8 patties)
Ingredients:
2 cups cooked wild rice blend, prepared as directed (already cooked, not dry)
1/2 cup yellow corn kernels
1 1/2 cups broccoli florets, chopped
1/2 package of presliced mushrooms (appx 4 oz), chopped
3 cloves garlic, minced
4 tbsp olive oil
1 cup vital wheat gluten flour
1/2 cup soy flour
1/2 cup water
Sea Salt and Fresh Cracked Pepper to taste

Directions:

Prepare rice as directed. If using frozen veggies, steam to defrost. Saute mushrooms and garlic in 2 tbsp of olive oil about 5-7 minutes, until fragrant. Mix together all ingredients including the remaining 2 tbsp olive oil, in a mixing bowl. Refrigerate for at least 20 minutes. Preheat oven to 375. Form mixture into patties. Bake for 25 minutes. Serve with Sprouts, avocado, onions, tomatoes, or whatever your heart desires.

Yield: 8 patties

Mexican Mocha Cupcakes

I made Mexican Mocha Cupcakes for my sidter's bachelorette party tonight.





They are the "Basic Chocolate" cupcake from VCTOTW with instant coffee crystals added to the batter. The frosting is a whole tub of Tofutti Better than Cream Cheese, 1/3 cup of EB, 2 tsp vanilla extract, 1 tsp chocolate extract, 1/2 cup cocoa powder, 1/4 cup instant coffee crystals, 1/4 cup chilled brewed coffee, 1 tsp cinnamon and 2 POUNDS OF POWDERED SUGAR! Then I dusted the tops with more cinnamon and put a chunk of Mexican Chocolate up on top.
