Sunday Night Dinner & Dessert

We have an abundance of tomatoes, so I used a few to make "Lazy Bruschetta." Just a few tomatoes seeded and chopped, 1 diced red onion, 2 cloves of minced garlic, dried basil (fresh would be much better), olive oil, and sea salt and fresh cracked pepper to taste. (The tomatoes, garlic and red onion in this are from Mom's garden.)

But the real traet was dessert. HOME MADE ICE CREAM!!! I don't have an ice cream maker but I saw this site: and had to give it a try. I used the recipe for Cookies and Cream from this site: but subbed coconut milk for the soy creamer. Yummy!

Now I have to admit that i gave up on the bag in the bag method after my outer bag sprung a leak and my hands were frozen, so I just poured it in a container and stuck it in the freezer, stirring it up a few times before it was completely frozen.
