Peanut Butter French Toast Dippers with Peanut Butter Maple Pecan Dipping Sauce

It's getting to be that time of year, even in sunny Southern California, where it's still tipping the therm at over 80 during the day. But mornings and evenings are indeed starting to get chilly, and the fall flavors of maple and pecan just feel right. This recipe originally appeared in Celine and my newest book, Vegans Go Nuts! Throwin' back this Thursday to 500 Vegan Recipes, Celine and my first book together.   It's fun to look back and see what VegNews had to say about the book way back when!  And as Celine and I just started working on our fourth book together (Can you believe it's already time to write The Complete Guide To Vegan Food Substitutions, Volume 2?) it was predicted the two of us would go on to write recipes together for a long time to come.

I am finally home from my book tour! (AKA, my epic journey across America.)  I am planning on writing a complete recap here on the blog soon, but I thought I would sneak in and post this lil diddy until then.  This post serves a few purposes.  One, to prove that it is easy to throw together a great meal in just a few minutes with just about anything you have in the house. Two, to use up the over 200 tortillas I still have left over from the New York Vegetarian Food Festival. And, three, to expose the rest of you to a phenomenon I only just learned about on a recent visit to Austin, Texas, that is the breakfast taco.
