Someone always brings a bean salad to a potluck. It's just one of those dishes that always makes its way onto the community table. Admittedly, I always avoided the bean salad. It just didn't seem all that appealing. BUT! I have recently been trying to add more proein and fiber into my diet, and beans really do fill that prerequisite quite nicely. Yield: 10 x 1 cup servings
1 1/2 cups black beans
1 1/2 cups garbanzo beans
1 1/2 cups kidney beans
1 1/2 cups white beans
1 1/2 cups red beans
1 1/2 cups pinto beans
2 cups diced celery
1/4 cup olive oil
1/4 cup red wine vinegar
1 tablespoon dried parsley
1 teaspoon dried basil
2 tablespoons minced garlic
2 tablespoons stone ground mustard
2 tablespoons lemon juice
1/2 teaspoon salt
1/2 teaspoon black pepper
Mix it all together in a big ass bowl!
