I sent her cookies for her birthday:

Lemon Sand Tarts
Ingredients
2 sticks margarine (I use Earth Balance Buttery Sticks)
1 cup sugar
1/4 cup soy yogurt (Vanilla, plain or lemon)
2 tsp vanilla
1 tsp lemon extract
3 cups flour
2 tsp baking powder
1/2 tsp salt
Directions
With an electric mixer, cream together margarine and sugar until fluffy. Add yougurt, vanilla and lemon extracts. Sift in flour, baking soda and salt. Mix until well combined. Divide into 4 equal pieces, and refrigerate at least one hour. Preheat oven to 350 degrees. Roll out dough onto a well floured surface and cut into desired shapes. Bake on a nonstick baking sheet (or line with parchment or a silicone baking mat) for 10-12 minutes. Remove from oven, let cool 5 minutes, transfer to cooling racks to cool completely.
For the Icing
Ingredients
3 cups confectioner's sugar (powdered)
3 tbsp soy milk
1 tsp vanilla
1 tsp lemon extract
Food coloring (optional)
Directions
Whisk or beat together until smooth. Add in color as desired. Apply to completely cool cookies, and let dry to harden completely before packaging.

Hey Joni! Wow...maybe I should save up to buy some EB to make these for Mother's Day! It'll be...about $28 Singapore dollars but I can try!
Those look amazing! My mom hates icing cause she's a little sugar phobic. What should I do?

Thanks! mustard...icing is pretty much just sugar, so you might want to skip the icing, and just add color to the cookies. Maybe just pipe on a little icing for words, or just outline the shape of the cookie with the icing, by placing it in a squeeze bottle with a very fine tip, that way you get a nice effect, without so much sugar!

Okay thanks Joni! Do I use your icing recipe and add colouring to it then ice? THe more lemon for mummy the better.
Must tell you how happy you made me, cause I've been trying to find BISCUIT-like recipes, my mom hates soft chewy cookies.

mustard, make the icing, then stir in the coloring, then ice.
or add in the coloring to the dough by kneading it in, before you refrigerate it.

Oh goodness. You won't believe this, but when I was looking at the pic with the stars, it looked just like one of those mind-boggling puzzles that you stare at to see the hidden picture. Seriously, I thought the red background was dough and the blue cookies were the table... I'm sure they taste great, though. :]
