Cheater Mac'n'Cheeze

When I want a real meal, I will take the time to make a full blown mac and cheeze. Whether it is the Cozy Inside recipe with its nutty crust or VCON's Mac Daddy with its tart and tangy noochy sauce, or any of the plethora of macs out there on the interwebs. BUT when I think back to my childhood, I have very fond memories of that flourescent orange stuff that took only a few minutes longer to make than it took to boil the pasta.

Enter "Cheater Mac'n'Cheeze." My quick, easy, cheater recipe for a creamy delicious bowl of kid-friendly mac.



Ingredients
1 pound of elbow macaroni, prepared in salted water
1/2 cup vegan sour cream (like Tofutti Better than Sour Cream)
1/2 cup vegan margarine (Earth Balance, of course)
1/2 cup nutritional yeast
2 tbsp white miso
2 tsp paprika
2 tsp garlic powder
1 tsp ground mustard
salt and pepper to taste

Directions
Prepare pasta. Drain and return to the pot. Throw in all of the ingredients and mix together well. Done.

This looks so good! I'm even tempted to put the flavoring in a baggie and pour it into the pot like I'm making the Kraft stuff.

Sometimes I get a wistful longing for that Kraft processed-cheesy stuff. I'll have to try this next time I have some Tofutti hanging around.

Don't consider that cheating--think of all the people who believe making mac 'n' cheese consists of chopping up velveeta and melting it with milk in a pan! This looks amazing.

I just made this for dinner and it is amazing! Thanks for the recipe! (I used less EB, some soymilk, and I added tahini and cayenne).

I just made this, other than halving it and adding broccoli florettes I followed the recipe to the letter and it was the single best vegan mac n cheez I've ever had! Thank you so much!

this is great! I scaled down the recipe to make one serving, and used tofutti cream cheese instead of sour cream. It's so quick & easy and tastes much better than packaged cr*p.

i had to use silken cause i didn't have any sour cream but it was really good! livi loved it too (which is saying something cause she's not much for eating lately).

This was so good and I had to improvise some ingredients I cut the recipe on half and ate it all myself
