So Delicious Coconut Milk!

Whoa, dudes. This is major news. A new certified vegan, certified gluten free, non-dairy beverage has hit the market and I am ALL OVER IT!

Sure coconut milk has been around for millions of years, but this is different.

A BIG OL' CARTON OF IT!

I am thoroughly enjoying this. I may now reduce the amount of cans of pure, full fat coconut milk that I buy in favor of this thick and lucious beverage.

Thick is the key word here. It is really thick and rich. I am very excited to try some cooking and baking with this stuff, as I am confident that it will behave quite nicely. By the glass...not so sure, unless I am really into some brownies or cookies...it's a bit too much for straight drinking (however it did pass the Kahlua test quite nicely).

Available in unsweetened, original, and vanilla. I got mine at Whole Foods for $4.69 a carton.

This is so exciting! I will definitely be getting a carton for myself the next time I go to Whole Foods.

is the unsweetened not sweet? i mean, could i use it in savory stuff, like mac and 'cheese'?

I got some of to try when it was on sale for half price. Needless to say I am addicted. I even used it in mashed potatoes (the Original)and my other half didn't even notice. It works great as a coffee creamer and you have to try it in a smoothie. However, out of budget at the moment.

Do you think if you thinned it with a little water it would be more 'drinkable'?

I bought the unsweetened carton and wasn't a huge fan, I felt that it was a bit too watery, although I agree, it was DARN GOOD with Kahlua.

Is the Original thicker? I may have to try that one now...

So happy to hear you like this and I bet it would be great to cook and bake with other than canned cocounut milk! I can just imagine how kahlua would be with this, yummmmm!

I have to admit, I'm not entirely sure what I would do with an entire carton of coconut milk. The stuff is so darned rich! I'm sure I"ll break down and buy it one day, though... since I absolutely love checking out new products.
