Gametime Snacks: Cashew Queso

Only a few more days until the big game! I thought I might take a little break from buffalo flavored snacks and, instead, in my continuing effort to provide you with the best vegan gametime snacks, here is my favorite Queso recipe. It is from my and Celine's new book Vegans Go Nuts! which will be out later this year.

Cashew Queso

*Oil-Free Option *Soy-Free *Gluten-Free
This makes a ton of queso. Perfect for putting in a crock pot to keep warm at a get together. It’s also pretty awesome to stir in a can (or two) of your favorite vegan chili. You can also pack it up in Jars and keep it refrigerated (or frozen) until you are ready to use it. Or…simply cut the recipe in half and you will still have plenty of queso to last for several dip and chip sessions. If you want to save time, you can stir in some of your favorite salsa at the end, instead of chopping up all of those fresh veggies.

Gametime Snacks: Buffalo Polenta Fries



It simply ain't gametime without Buffalo something! I have been lazy the last few years, simply reposting my Toffalo Wings recipe every time this time of year rolls around. Not this year. This year I am going buffalo crazy. Last week I posted my recipe for Buffalo Peanut Sushi (are you and your friends brave enough to try it on gameday?) and today I give you Buffalo Polenta Fries!

The Engine 2 Challenge Week 3: Making Lasting Lifestyle Changes


Let's just start this post off with a huge thanks to Rip Esselstyn himself.  He is touring the country and making lots of stops.  I was lucky enough to catch his appearance at the Whole Foods Market in Huntington Beach on Tuesday, earlier this week.

I have to admit, the crowd that was there, was pretty difficult.  I mean, like hecklers at a comedy show, there were people arguing every point he made.  "But what about raw milk?" "What's wrong with lean meat?" "What about the specific vitamins you can get from bison and not anywhere else?"  I mean, seriously?  Why would anyone come to a lecture and appearance by a VEGAN, PLANT STRONG, lifestyle promoter and ruin it for the rest of us trying to get and stay inspired on what is a very difficult journey for many.

Tuffalo Hot Wings - Perfect for Gameday!



No money bets this year, but my husband and I have our own pool for house chores, back rubs, and other unmentionables.  Ha!

A small affair today.  Just us, my sister and my nephew, so we won't be making anything major.  BUT we will be making wings!  Toffalo Hot Wings to be exact.  This recipe is from The Complete Guide to Vegan Food Substitutions!

Tuffalo Hot Wings

Serve with Cool Ranch Dipping Sauce (below) and a few stalks of celery for an even more realistic experience.

A deep fat fryer comes in handy here, but if you don't have one, a pot with oil heated to 350°F (180°C) will do just fine.

Tofuffalo Wings - Perfect For Gameday!



Superbowl Sunday is this Sunday, and truth be told, I don't even know who's playing...but if you are heading to, or hosting a party, and want to serve up some wings, well, here you go!

Tofuffalo Wings

Serve with Cool Ranch Dipping sauce and a few stalks of celery for an even more realistic experience. A deep-fat fryer comes in handy here, but if you don’t have one, a pot with oil heated to 350°F (180°C) will do just fine.
