BBQ Seitan Ribs from The Complete Guide to Vegan Food Substitutions
Well, I missed Meatless Monday, so I figured I'd give you two for Tuesday!  With Summer almost in full swing, it's time to dust off those grills and dining al fresco.

How Much F'ing Turkey Did You Make Anyways?

Vegetarian Plus Whole Vegan Turkey (Complete with a butthole for stuffing!)
getting a margarine massage before roasting.
So, seriously, for the week after Thanksgiving all you see on the news, and in pop-up ads all over the interwebs, are ways to use your leftover Turkey.  And all I kept thinking was, "Seriously?  How big of a f*ing turkey did you make that you need a butt ton of recipes to use up the leftovers?"  It's one of the amazing things about being vegan, you know?  Our food is so delicious, we don't have many leftovers, and when we do, we just eat them as, I dunno, leftovers!

Two for Tuesday: Macaroni

I love macaroni.  I love it hot and I love it cold.  Here are two of my favorite macaroni recipes, and neither one of them is mac and cheese!  (Though I really love that, too.)

Buffalo Mac Salad: cold AND hot

Buffalo Mac Salad (From The Complete Guide to Vegan Food Substitutions, page 100)
Maybe I've been working in a deli for too long, but it seems I can always be counted on to be the one who whips up a kick ass macaroni salad to bring to any get together.

Easy Breezy Summer Afternoons (are perfect for mac salad!)

Buffalo Mac Salad
It can be found on page 100 of The Complete Guide to Vegan Food Substitutions.
Man, do I love a warm sunny day.  It begs for you to come outside and enjoy yourself instead of cooping yourself up inside and staring at a computer screen.  And when I spend the day outside, the last thing I want to do is go back inside to cook!

Boogity, Boogity, Boogity!

Yes, I spent the entire weekend in Fontana at the Auto Club Speedway watching the NASCAR races.  The Royal Purple 300 on Saturday and the Auto Club 400 on Sunday.  I've been a few times in the past, but this last year we (my husband and I) got really into it and decided to really make a weekend out of it.  So this year we prepared.  I remember from last year, when all we did was bring ourselves, that there is not much besides french fries and alcohol for us vegans.   This year we made sure there was plenty to eat.

Dan and I enjoying our veg friendly eats on the tailgate.

Friday night we prepared everything for the weekend.  I made up a big batch of macaroni salad, a bunch of Soyrizo and tofu scramble breakfast burritos, and then we packed up some veggie dogs, buns, condiments, crackers, sodas, waters, and of course, some booze!  We had everything we needed to get our tailgate on in the parking lot!
